Le Cordon Bleu Intermediate: Saumon Farci en Feuille de Chou Vert, Sauce Vin Rouge/Savoy Cabbage filled with salmon, red wine sauce

Lesson 2 of intermediate!  Sorry for the lack of posts lately, I was spending time with my mum and brother who came by to celebrate my (and my brother’s) birthday in Paris!  Anyway, this dish was pretty well done – the stuffing was well seasoned and the salmon was cooked perfectly, but the sauce was too reduced (Chef Lesourd called it “lip gloss”)
