Salt and Pepper roasted chicken Breast & Sweet Potato Fries

Stir-Fried Broccoli

Chicken Breasts:

Preheat your oven to 180˚C

Lightly coat with olive oil to keep the moisture in, add some salt and pepper.  Put it in the oven and bake until the meat is completely white and you can stab your knife all the way through pretty easily (for me this was about 20, 25 minutes).  I’ve also done this before with the chicken cut up into cubes, and that works quite well as well.  It cooks much more quickly but isn’t quite as juicy.

Sweet Potato Fries:

Your chicken should already be cooking, so the oven should be hot!

Cut up your sweet potato into french-fry-like shapes.  Make sure they’re not too thin, or they’ll burn! Brush with olive oil, lay them out on a tray and put them in the oven!  These will take about in total 5 minutes less time to cook than the chicken breasts will, so allot your time accordingly.

After everything is done, get rid of any extra oil on your tray/food and, season your fries with salt and pepper, and enjoy!  Sweet potato tastes amazing with greek yoghurt.

Broccoli:

While everything is in your oven, wash, cut, and re-wash your broccoli.  Blanch it (bring it from cold water to a boil), and then quickly stir-fry with garlic, olive oil, and salt.  You could add soya sauce instead of salt as well, it’s pretty 随便 (sui bian, meaning whatever).

And there you have it!  For me, home cooking should be three things: super simple, super healthy, and super yummy!  It’s nothing like what I’m learning at Le Cordon Bleu, but when I’m on a time crunch it works very nicely.  I can eat clean and still leave my tongue happy!
